Yummy Gazpacho Dip
We participated in Taste of Home a few weekends ago with the Recipe for Yummy Gazpacho Dip. There have been many people requesting the Recipe, so here it is.
Ingredients:
- 3-4 ripe (but not smushy) avocados, chopped
- 3-4 finely chopped tomatoes
- 5 green onions, chopped
- 4 oz. can chopped green chilies
- 4 oz. can chopped black olives
- 3 T. olive oil
- 1/2 T. cider vinegar
- 1 t. salt
- 1 t. garlic
- 1/4 t. pepper
Preparation:
Mix all ingredients together, being careful not to smush avocados. Chill for 2-3 hours in the fridge and enjoy!
